What I'm Eating Week 2

Welcome to week 2 of eating healthy! Here are 5 new recipes to try. Let me know what you think! After week 1, I'm feeling less bloated & have a lot more energy! This week I ordered everything from Sprouts via Instacart. If you're new to cooking like me, this is a great option because you won't have to spend lots of time in the store trying to track down ingredients.


Here is my plan for 10/12-10/16:


Creamy Chicken Pesto Pasta

  • ½ pound penne pasta about 2 1/2 cups dry (half of a one pound box)

  • 1 tablespoon olive oil

  • 2 garlic cloves minced

  • 1 teaspoon italian seasoning

  • 1 pound boneless skinless chicken breast cut into bite-sized chunks

  • Salt and pepper to taste

  • 2 tablespoons butter

  • 3 tablespoons flour

  • 1 cup chicken broth

  • 1 cup half and half or all milk/cream

  • ½ cup freshly grated Parmesan

  • 1 cup freshly shredded Mozzarella

  • ½ cup fresh basil pesto or more, to taste

  • Fresh basil for garnish, if desired



Avocado And Chipotle Shrimp Tostadas With Cilantro Lime Crema

  • 1 lb medium shrimp, peeled, deveined and tails removed

  • 1 chipotle in adobo sauce, chopped

  • Juice of one lime

  • 2 tablespoons of olive oil

  • 1 tablespoon of minced garlic

  • 1/2 tsp chili powder

  • 1/2 tsp ground cumin

  • 1/2 tsp ground paprika

  • 1/2 tsp salt

  • 1/4 tsp freshly ground black pepper

  • 1/3 cup plain yogurt

  • 1 Tbsp lime juice

  • 2 Tbsp finely chopped cilantro

  • 1 tablespoon of chipotle adobo sauce

  • 1/2 tsp finely minced garlic



Garlic Butter Herb Steak Bites with Potatoes

  • 1 pound yukon gold potatoes sliced about 1/2 inch in thickness

  • 3 garlic cloves minced

Taco Stuffed Sweet Potatoes
